Roberto Laurens, Jr., lines a cheese form with cheese cloth as he prepares to make Siegfried’s Pride, a variety of cheese from Switzerland, out of High Lawn Farm milk. The cheese operation is a new endeavor for the farm. Milk is heated gently with enzymes and cultures to start the cheesemaking process, separating the whey from the solid proteins.
High Lawn Farm has been operating as a Jersey dairy since 1923. The farm has 8 varieties of cheese, with hopes the cheese operation will expand their place in the market. Wednesday, August 29, 2019.
